Mango and Chicken Skewers

- Wooden skewers - 8
- Salt and pepper - To taste
- Ground cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Lime juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Red onion - 1, cut into chunks
- Red bell pepper - 1, cut into chunks
- Ripe mango - 2, peeled and cut into chunks
- Chicken breast - 2, boneless and skinless, cut into cubes
Let's Get Started
- In a bowl, combine the olive oil, lime juice, minced garlic, ground cumin, salt, and pepper to make the marinade.
- Add the chicken cubes to the marinade and toss to coat. Let it marinate for at least 15 minutes.
