Mala Hot Pot is a spicy and numbing Chinese hot pot dish filled with a variety of ingredients cooked in a flavorful broth.
Ingredients - Serves 4
- Glass noodles - 4 ounces
- Bean sprouts - 1 cup
- Enoki mushrooms - 4 ounces
- Napa cabbage - 1/2 head, sliced
- Tofu - 1 block, cubed
- Fish balls - 8 pieces
- Shrimp - 8 ounces, peeled and deveined
- Sliced lamb - 8 ounces
- Thinly sliced beef - 8 ounces
- Salt - To taste
- Sugar - 1 teaspoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 4 cloves, minced
- Ginger - 1 thumb-sized piece, sliced
- Dried chili peppers - 10 pieces
- Sichuan peppercorns - 2 tablespoons
- Chicken broth - 6 cups
Let's Get Started
- In a large pot, bring the chicken broth to a boil.
- Add the Sichuan peppercorns, dried chili peppers, ginger, and garlic to the broth. Simmer for 15 minutes to infuse the flavors.
- Remove the peppercorns and chili peppers from the broth.
- Stir in the soy sauce, sesame oil, sugar, and salt. Adjust the seasoning according to your taste.
- Prepare a hot pot or a large pot with a divider. Place the broth on one side and fill the other side with water.
- Arrange the thinly sliced beef, sliced lamb, shrimp, fish balls, tofu, Napa cabbage, enoki mushrooms, bean sprouts, and glass noodles on separate plates.
- Dip the ingredients into the hot broth to cook. Cook the meat and seafood until they are no longer pink and the vegetables until they are tender.
- Serve the cooked ingredients with dipping sauces like soy sauce, sesame oil, and chili oil.
