Por Pia Tord
Por Pia Tord is a delicious Thai appetizer, filled with a mixture of vegetables and glass noodles, then deep-fried to a golden crisp.
Ingredients - Serves 4
- Sweet chili sauce - For serving
- Vegetable oil - For frying
- White pepper - 1/2 teaspoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Mushrooms - 1/2 cup, finely chopped
- Carrots - 1/2 cup, shredded
- Cabbage - 1 cup, shredded
- Glass noodles - 1 cup, soaked and cut into 1 inch pieces
- Spring roll wrappers - 12 pieces
Let's Get Started
- In a pan, heat a little oil and sauté the garlic until fragrant.
- Add the mushrooms, cabbage, and carrots to the pan and stir-fry for a few minutes.
- Add the glass noodles, soy sauce, and white pepper. Stir well and cook for another 2-3 minutes, then remove from heat and let the filling cool.
- Place a spoonful of the filling on each spring roll wrapper. Fold the sides in and roll up tightly, sealing the edge with a little water.
- Heat the vegetable oil in a deep pan or fryer. Once hot, add the spring rolls and fry until golden brown.
- Remove the spring rolls from the oil and drain on paper towels.
- Serve the Por Pia Tord hot with sweet chili sauce for dipping.
