Makgeolli
Makgeolli is a traditional Korean rice wine that is made from a mixture of wheat and rice, which gives it a milky, off-white color and sweetness.
Ingredients - Serves 10
- Sugar - 1 cup
- Yeast - 1 teaspoon
- Nuruk - 1 cup
- Water - 8 cups
- Sweet rice - 2 cups
Let's Get Started
- Rinse the sweet rice several times until the water runs clear. Soak the rice in water for at least 2 hours.
- Drain the rice and steam it for about 40 minutes.
- Let the rice cool down and then mix it with the nuruk and yeast in a large jar.
- Add water to the jar and mix well. Cover the jar with a cloth and let it ferment in a cool, dark place for about a week.
- After a week, strain the mixture through a cloth. Add sugar to taste.
- The makgeolli is now ready to serve. It can be stored in the refrigerator for up to a week.
