Ingredients - Serves 4
- Flour tortillas - 8
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Chili powder - 1 tablespoon
- Beef broth - 2 cups
- Diced tomatoes - 1 can (14.5 ounces)
- Jalapeno pepper - 1, seeded and chopped
- Green bell pepper - 1, chopped
- Onion - 1 large, chopped
- Garlic - 4 cloves, minced
- Beef brisket - 2 pounds
Let's Get Started
- Place the beef brisket in a slow cooker.
- Add the garlic, onion, bell pepper, jalapeno, tomatoes, beef broth, chili powder, cumin, salt, and pepper.
- Cover and cook on low for 8 hours, or until the beef is tender and can be easily shredded with a fork.
- Remove the beef from the slow cooker and shred it with two forks.
- Return the shredded beef to the slow cooker and stir to combine with the juices.
