Loukaniko
Loukaniko is a Greek sausage that is often flavored with fennel seed, orange zest, and other herbs. It's a delicious addition to any meal.
Ingredients - Serves 4
- Sausage casings - 10 feet
- Pepper - 1 teaspoon
- Salt - 1 tablespoon
- Red wine - 1/2 cup
- Fennel seeds - 1 tablespoon
- Orange zest - 1 tablespoon
- Garlic - 4 cloves, minced
- Pork fatback - 1/2 pound, cut into chunks
- Pork shoulder - 2 pounds, cut into chunks
Let's Get Started
- Place the pork shoulder and fatback in the freezer for about an hour until they are firm but not frozen.
- Grind the pork and fatback through a meat grinder into a large bowl.
- Add the garlic, orange zest, fennel seeds, red wine, salt, and pepper to the bowl and mix well.
- Rinse the sausage casings and keep them in a bowl of warm water.
- Stuff the sausage mixture into the casings, twisting them into links every 4 inches.
- Let the sausages dry in the refrigerator for 2 hours.
- Grill the sausages over medium heat until they are browned and cooked through, about 20 minutes.
