Let's Get Started

  1. Place the pork shoulder and fatback in the freezer for about an hour until they are firm but not frozen.
  2. Grind the pork and fatback through a meat grinder into a large bowl.
  3. Add the garlic, orange zest, fennel seeds, red wine, salt, and pepper to the bowl and mix well.
  4. Rinse the sausage casings and keep them in a bowl of warm water.
  5. Stuff the sausage mixture into the casings, twisting them into links every 4 inches.
  6. Let the sausages dry in the refrigerator for 2 hours.
  7. Grill the sausages over medium heat until they are browned and cooked through, about 20 minutes.
