  1. Cut the crocodile meat and pork fatback into small pieces and place them in the freezer for about an hour until they are partially frozen.
  2. Grind the partially frozen meat and fatback through a meat grinder into a large bowl.
  3. Add the garlic, salt, black pepper, and cayenne pepper to the bowl and mix well.
  4. Rinse the sausage casings in warm water and keep them in a bowl of warm water.
  5. Stuff the sausage mixture into the casings and twist them into links.
  6. Place the sausages in the refrigerator for a few hours to firm up.
  7. Grill the sausages over medium heat for about 15 minutes, turning them occasionally, until they are cooked through and browned.
