Crocodile Sausage

- Sausage casings - 10 feet
- Cayenne pepper - 1/4 teaspoon
- Black pepper - 1/2 teaspoon

- Pork fatback - 1/4 pound
- Crocodile meat - 1 pound
Let's Get Started
- Cut the crocodile meat and pork fatback into small pieces and place them in the freezer for about an hour until they are partially frozen.
- Grind the partially frozen meat and fatback through a meat grinder into a large bowl.
- Add the garlic, salt, black pepper, and cayenne pepper to the bowl and mix well.
- Rinse the sausage casings in warm water and keep them in a bowl of warm water.
- Stuff the sausage mixture into the casings and twist them into links.
- Place the sausages in the refrigerator for a few hours to firm up.
- Grill the sausages over medium heat for about 15 minutes, turning them occasionally, until they are cooked through and browned.
