Lotus Root and Pork Soup

- Salt - To taste
- Water - 2 liters
- Ginger - 3 slices
- Goji berries - 1 tablespoon
- Red dates - 6, pitted
- Pork ribs - 500 grams, blanched
- Lotus root - 1, peeled and sliced
Let's Get Started
- Rinse the lotus root and cut into slices. Rinse the pork ribs and blanch in boiling water for a few minutes. Drain and set aside.
- In a large pot, add the lotus root, pork ribs, red dates, goji berries, and ginger. Pour in the water.
- Bring the soup to a boil, then reduce the heat to low and simmer for about 2 hours, or until the pork is tender and the flavors are well combined.
- Season with salt to taste before serving.
