Lokum
A traditional Turkish dessert, Lokum or Turkish Delight is a sweet treat with a jelly-like consistency, often flavored with rosewater, lemon, or mint and dusted with icing sugar.
Ingredients - Serves 30
- Icing sugar - 1 cup
- Red food coloring - 2 drops
- Rosewater - 1/2 cup
- Cream of tartar - 1 teaspoon
- Cornstarch - 1 cup
- Sugar - 4 cups
Let's Get Started
- In a heavy bottomed saucepan, combine the sugar, 1 1/2 cups water, and lemon juice. Stir over medium heat until the sugar dissolves.
- In a separate bowl, mix together the cornstarch and cream of tartar with 1 cup of water until smooth. Gradually stir this into the sugar syrup until the mixture is smooth.
- Bring the mixture to a boil over medium heat, stirring constantly. Reduce the heat to low and let it simmer, still stirring regularly, for about an hour, or until the mixture has become a sticky, thick paste.
- Remove from heat and stir in the rosewater and food coloring.
- Pour the mixture into a greased 9-inch square pan, spreading it smooth with a spatula. Let it cool in a cool, dry place (not the refrigerator) for 3 to 4 hours, or until set.
- Once the Turkish Delight has set, cut it into squares and dust it with icing sugar to prevent sticking.
