Let's Get Started

  1. In a heavy bottomed saucepan, combine the sugar, 1 1/2 cups water, and lemon juice. Stir over medium heat until the sugar dissolves.
  2. In a separate bowl, mix together the cornstarch and cream of tartar with 1 cup of water until smooth. Gradually stir this into the sugar syrup until the mixture is smooth.
  3. Bring the mixture to a boil over medium heat, stirring constantly. Reduce the heat to low and let it simmer, still stirring regularly, for about an hour, or until the mixture has become a sticky, thick paste.
  4. Remove from heat and stir in the rosewater and food coloring.
  5. Pour the mixture into a greased 9-inch square pan, spreading it smooth with a spatula. Let it cool in a cool, dry place (not the refrigerator) for 3 to 4 hours, or until set.
  6. Once the Turkish Delight has set, cut it into squares and dust it with icing sugar to prevent sticking.
