Mille Feuille
Mille-Feuille, also known as Napoleon, is a classic French pastry with layers of puff pastry and cream filling. It's a decadent and elegant dessert that is sure to impress.
Ingredients - Serves 6
- Icing sugar - For dusting
- Butter - 50 grams
- Cornstarch - 40 grams
- Egg yolks - 3
- Sugar - 125 grams
- Vanilla pod - 1
- Milk - 500 ml
- Egg yolk - 1
- Puff pastry - 500 grams
Let's Get Started
- Preheat the oven to 200°C (180°C fan) mark 6.
- Roll out the puff pastry and cut into three equal rectangles. Place on a baking tray and prick all over with a fork.
- Brush with beaten egg yolk and bake for 15-20 minutes until golden and crisp. Leave to cool.
- To make the filling, heat the milk and vanilla pod in a pan until just boiling.
- In a separate bowl, whisk together the sugar, egg yolks and cornstarch.
- Pour the hot milk onto the egg mixture, whisking constantly.
- Return the mixture to the pan and cook over a low heat, stirring constantly, until thickened.
- Remove from the heat and stir in the butter. Leave to cool.
- Spread the cooled custard over one layer of the pastry. Top with another layer of pastry, then more custard, then the final layer of pastry.
- Dust with icing sugar before serving.
