Apricot Cobbler
This delicious apricot cobbler is made with fresh apricots and a buttery biscuit topping.
Ingredients - Serves 6
- Milk - 1/2 cup
- Unsalted butter - 1/2 cup, cold and cubed
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- Sugar - 1/4 cup
- All-purpose flour - 1 cup
- Cinnamon - 1 teaspoon
- Lemon juice - 1 tablespoon
- Cornstarch - 2 tablespoons
- Sugar - 1 cup
- Apricots - 4 cups, pitted and sliced
Let's Get Started
- Preheat the oven to 375°F.
- In a large bowl, combine the sliced apricots, sugar, cornstarch, lemon juice, and cinnamon. Mix well to coat the apricots.
- Transfer the apricot mixture to a baking dish.
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
- Pour in the milk and stir until just combined. Do not overmix.
- Drop spoonfuls of the biscuit dough onto the apricot mixture in the baking dish.
- Bake for 35-40 minutes, or until the topping is golden brown and the apricots are bubbling.
- Remove from the oven and let cool for a few minutes before serving.
- Serve warm with a scoop of vanilla ice cream, if desired.
