Apricot Cobbler

Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the sliced apricots, sugar, cornstarch, lemon juice, and cinnamon. Mix well to coat the apricots.
  3. Transfer the apricot mixture to a baking dish.
  4. In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
  5. Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
  6. Pour in the milk and stir until just combined. Do not overmix.
  7. Drop spoonfuls of the biscuit dough onto the apricot mixture in the baking dish.
  8. Bake for 35-40 minutes, or until the topping is golden brown and the apricots are bubbling.
  9. Remove from the oven and let cool for a few minutes before serving.
  10. Serve warm with a scoop of vanilla ice cream, if desired.
