  1. Cook the lobster tails in boiling salted water for about 10 minutes. Drain, cool, and remove the meat from the shells. Cut into bite-sized pieces.
  2. Melt the butter in a large skillet over medium heat. Add the lobster and cook for 2-3 minutes, until heated through. Remove the lobster from the skillet and set aside.
  3. In the same skillet, add the cream and bring to a simmer. In a separate bowl, whisk together the egg yolks and sherry. Gradually whisk this mixture into the cream, cooking and stirring until the sauce thickens.
  4. Return the lobster to the skillet and season with salt, cayenne pepper, nutmeg, and lemon juice. Cook for another 2-3 minutes, until the lobster is coated with the sauce and heated through.
  5. Serve the Lobster Newberg over toast points or puff pastry shells.
