  2. Season the Chateaubriand with salt and pepper.
  3. Heat the olive oil in a skillet over high heat. Add the Chateaubriand and sear on all sides until browned. Transfer to the oven and roast for 15-20 minutes for medium-rare.
  4. While the beef is roasting, make the Béarnaise sauce. Melt the butter in a saucepan over medium heat. Add the shallots and cook until softened.
  5. Add the white wine and tarragon to the saucepan and bring to a simmer. Cook until the liquid is reduced by half.
  6. In a separate bowl, whisk together the egg yolks and lemon juice. Slowly whisk in the hot butter mixture until combined.
  7. Return the sauce to the saucepan and cook over low heat, stirring constantly, until thickened. Season with salt and pepper.
  8. Remove the Chateaubriand from the oven and let it rest for a few minutes before slicing. Serve with the Béarnaise sauce.
