Lobster Chowder
This creamy and flavorful lobster chowder is made with fresh lobster meat, potatoes, and vegetables.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Milk - 2 cups
- Chicken broth - 4 cups
- All-purpose flour - 2 tablespoons
- Potatoes - 2 medium, peeled and diced
- Carrot - 1 large, diced
- Celery - 2 stalks, diced
- Onion - 1 medium, diced
- Butter - 2 tablespoons
- Lobster meat - 1 pound, cooked and chopped
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the onion, celery, and carrot. Cook until the vegetables are softened, about 5 minutes.
- Stir in the flour and cook for 1 minute.
- Gradually whisk in the chicken broth and milk.
- Add the potatoes, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
- Add the chopped lobster meat and cook for an additional 5 minutes.
- Remove the bay leaf and season with additional salt and pepper if needed.
- Serve hot, garnished with fresh parsley.
