Lemongrass Chicken Banh Mi
A Vietnamese sandwich filled with marinated lemongrass chicken and fresh vegetables.
Ingredients - Serves 4
- Jalapeno - 1, thinly sliced
- Cilantro - 1/2 cup, loosely packed
- Carrot - 1, julienned
- Cucumber - 1, thinly sliced
- Mayonnaise - 1/4 cup
- Baguette - 1, cut into 4 pieces and halved lengthwise
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemongrass - 2 stalks, finely chopped
- Chicken breast - 2, boneless and skinless
Let's Get Started
- In a bowl, combine the chicken, lemongrass, garlic, fish sauce, and sugar. Marinate for at least 15 minutes.
- Heat a grill pan over medium-high heat. Add the chicken and cook until it's no longer pink in the middle, about 6 minutes per side.
- Spread the mayonnaise on the cut sides of the baguette.
- Arrange the cucumber, carrot, cilantro, and jalapeno on the bottom halves of the baguette.
- Place the cooked chicken on top of the vegetables.
- Cover with the top halves of the baguette.
