Lemon Rice with Basmati Rice

Ingredients - Serves 4

Let's Get Started

  1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain the water and set aside.
  2. In a large pot, bring 2 cups of water to a boil. Add the soaked and drained basmati rice to the boiling water. Cook the rice until it is 90% cooked. Drain any excess water and set aside.
  3. In a separate pan, heat vegetable oil over medium heat. Add mustard seeds and let them splutter.
  4. Add urad dal, chana dal, curry leaves, and green chili to the pan. Sauté for a minute until the dals turn golden brown.
  5. Add turmeric powder and sauté for a few seconds.
  6. Add the cooked basmati rice to the pan and mix well with the spices.
  7. Pour lemon juice over the rice and mix gently to combine.
  8. Season with salt to taste and mix well.
  9. Garnish with freshly chopped coriander leaves.
  10. Serve hot as a side dish with your favorite curry or enjoy it on its own.
