Lemon Rice with Basmati Rice
Lemon rice is a flavorful and tangy rice dish made with basmati rice, lemon juice, and aromatic spices.
Ingredients - Serves 4
- Fresh coriander leaves - 2 tablespoons, chopped
- Salt - To taste
- Turmeric powder - 1/2 teaspoon
- Green chili - 1, slit
- Curry leaves - 10 leaves
- Chana dal (split bengal gram) - 1 teaspoon
- Urad dal (split black gram) - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Water - 2 cups
- Basmati rice - 1 cup
Let's Get Started
- Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain the water and set aside.
- In a large pot, bring 2 cups of water to a boil. Add the soaked and drained basmati rice to the boiling water. Cook the rice until it is 90% cooked. Drain any excess water and set aside.
- In a separate pan, heat vegetable oil over medium heat. Add mustard seeds and let them splutter.
- Add urad dal, chana dal, curry leaves, and green chili to the pan. Sauté for a minute until the dals turn golden brown.
- Add turmeric powder and sauté for a few seconds.
- Add the cooked basmati rice to the pan and mix well with the spices.
- Pour lemon juice over the rice and mix gently to combine.
- Season with salt to taste and mix well.
- Garnish with freshly chopped coriander leaves.
- Serve hot as a side dish with your favorite curry or enjoy it on its own.
