Lavender Honey Ice Cream

Ingredients - Serves 6
- Salt - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Egg yolks - 4
- Dried lavender buds - 2 tablespoons
- Honey - 1/4 cup
- Granulated sugar - 3/4 cup
- Whole milk - 1 cup
- Heavy cream - 2 cups

- In a saucepan, combine the heavy cream, whole milk, sugar, honey, and dried lavender buds.
- Heat the mixture over medium heat until it reaches a gentle simmer. Remove from heat and let steep for 10 minutes.
- In a separate bowl, whisk the egg yolks until smooth.
- Slowly pour the lavender-infused cream mixture into the egg yolks, whisking constantly to temper the eggs.
- Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
- Remove from heat and stir in the vanilla extract and salt.
- Strain the mixture through a fine-mesh sieve to remove the lavender buds.
- Cover and refrigerate for at least 4 hours, or overnight, until completely chilled.
- Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
