Lavender Honey Ice Cream

  1. In a saucepan, combine the heavy cream, whole milk, sugar, honey, and dried lavender buds.
  2. Heat the mixture over medium heat until it reaches a gentle simmer. Remove from heat and let steep for 10 minutes.
  3. In a separate bowl, whisk the egg yolks until smooth.
  4. Slowly pour the lavender-infused cream mixture into the egg yolks, whisking constantly to temper the eggs.
  5. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
  6. Remove from heat and stir in the vanilla extract and salt.
  7. Strain the mixture through a fine-mesh sieve to remove the lavender buds.
  8. Cover and refrigerate for at least 4 hours, or overnight, until completely chilled.
  9. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  10. Transfer the churned ice cream to a lidded container and freeze for at least 2 hours to firm up.
