Inner Richmond Ice Cream Sandwiches

Let's Get Started

  1. Preheat the oven to 375°F.
  2. In a medium bowl, combine the flour, baking soda, and salt.
  3. In a large bowl, beat the butter, granulated sugar, and brown sugar until creamy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually beat in the flour mixture. Stir in the chocolate chips.
  6. Drop by rounded tablespoon onto ungreased baking sheets.
  7. Bake for 9 to 11 minutes, or until golden brown. Cool on wire racks.
  8. Once cookies are cool, place a scoop of vanilla ice cream between two cookies. Press together gently. Repeat with remaining cookies and ice cream.
  9. Wrap each ice cream sandwich in plastic wrap and freeze until firm, at least 2 hours.
