Inner Richmond Ice Cream Sandwiches
A delightful treat that combines homemade cookies and ice cream to create the perfect dessert.
Ingredients - Serves 8
- Vanilla ice cream - 1 quart
- Chocolate chips - 2 cups
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Brown sugar - 3/4 cup, packed
- Granulated sugar - 3/4 cup
- Unsalted butter - 1 cup, softened
- Salt - 1/2 teaspoon
- Baking soda - 1 teaspoon
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 375°F.
- In a medium bowl, combine the flour, baking soda, and salt.
- In a large bowl, beat the butter, granulated sugar, and brown sugar until creamy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually beat in the flour mixture. Stir in the chocolate chips.
- Drop by rounded tablespoon onto ungreased baking sheets.
- Bake for 9 to 11 minutes, or until golden brown. Cool on wire racks.
- Once cookies are cool, place a scoop of vanilla ice cream between two cookies. Press together gently. Repeat with remaining cookies and ice cream.
- Wrap each ice cream sandwich in plastic wrap and freeze until firm, at least 2 hours.
