Lau Mam
Lau Mam is a traditional Vietnamese hot pot dish made with fermented fish sauce broth and a variety of seafood and vegetables.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Thai basil - 1/2 cup, chopped
- Bean sprouts - 1 cup
- Rice noodles - 8 ounces
- Tofu - 1/2 cup, cubed
- Fish fillets - 1/2 pound, sliced
- Squid - 1/2 pound, sliced
- Shrimp - 1/2 pound
- Eggplant - 1 cup, sliced
- Okra - 1 cup, sliced
- Pineapple - 1 cup, sliced
- Water - 6 cups
- Fermented fish sauce - 1/2 cup
Let's Get Started
- In a large pot, combine the fermented fish sauce and water. Bring to a boil.
- Add the pineapple, okra, and eggplant to the pot. Cook for 10 minutes.
- Add the shrimp, squid, fish fillets, and tofu to the pot. Cook for another 5 minutes.
- Meanwhile, cook the rice noodles according to the package instructions.
- To serve, place a portion of rice noodles in each bowl. Ladle the hot pot broth and seafood over the noodles.
- Top with bean sprouts, Thai basil, and a squeeze of lime juice.
- Enjoy the Lau Mam hot pot with a side of steamed rice, if desired.
