Let's Get Started

  1. In a large pot, combine the fermented fish sauce and water. Bring to a boil.
  2. Add the pineapple, okra, and eggplant to the pot. Cook for 10 minutes.
  3. Add the shrimp, squid, fish fillets, and tofu to the pot. Cook for another 5 minutes.
  4. Meanwhile, cook the rice noodles according to the package instructions.
  5. To serve, place a portion of rice noodles in each bowl. Ladle the hot pot broth and seafood over the noodles.
  6. Top with bean sprouts, Thai basil, and a squeeze of lime juice.
  7. Enjoy the Lau Mam hot pot with a side of steamed rice, if desired.
