Pad Thai
Pad Thai is a classic Thai dish consisting of stir-fried rice noodles with eggs, tofu, shrimp, and garnished with crushed peanuts, lime and fresh herbs.
Ingredients - Serves 4
- Pad thai sauce - 1/2 cup
- Lime - 1, cut into wedges
- Unsalted roasted peanuts - 1/4 cup, crushed
- Green onions - 1/2 cup, chopped
- Bean sprouts - 1 cup
- Garlic - 2 cloves, minced
- Eggs - 2
- Shrimp - 1 cup, peeled and deveined
- Tofu - 1 cup, cubed
- Vegetable oil - 2 tablespoons
- Rice noodles - 8 ounces
Let's Get Started
- Soak the rice noodles in warm water for 30 minutes, then drain and set aside.
- Heat the oil in a wok or large frying pan over medium-high heat.
- Add the tofu and shrimp and cook until the shrimp is pink, about 3 minutes.
- Push the tofu and shrimp to one side of the pan and crack the eggs into the other side. Scramble the eggs and cook until set.
- Add the garlic, noodles, and Pad Thai sauce to the pan. Stir-fry for 2-3 minutes, until the noodles are tender.
- Stir in the bean sprouts and green onions.
- Serve the Pad Thai garnished with the crushed peanuts and lime wedges.
