Tofu Pho
A delicious and hearty Vietnamese noodle soup made with tofu and traditional spices.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Fresh basil - A handful
- Bean sprouts - 1 cup
- Soy sauce - 2 tablespoons
- Cinnamon stick - 1
- Star anise - 2
- Ginger - 1 inch piece, sliced
- Garlic - 2 cloves, minced
- Onion - 1, thinly sliced
- Vegetable broth - 4 cups
- Tofu - 200 grams, cubed
- Rice noodles - 200 grams
Let's Get Started
- Soak the rice noodles in warm water for 20 minutes, then drain and set aside.
- In a large pot, sauté the tofu until golden brown, then remove and set aside.
- In the same pot, add the vegetable broth, onion, garlic, ginger, star anise, and cinnamon stick. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Strain the broth to remove the solids, then return it to the pot and add the soy sauce.
- Add the noodles and tofu to the broth and cook for a few more minutes, until the noodles are tender.
- Serve the pho in bowls, topped with bean sprouts, fresh basil, and a squeeze of lime.
