Tofu Pho

Ingredients - Serves 4

Let's Get Started

  1. Soak the rice noodles in warm water for 20 minutes, then drain and set aside.
  2. In a large pot, sauté the tofu until golden brown, then remove and set aside.
  3. In the same pot, add the vegetable broth, onion, garlic, ginger, star anise, and cinnamon stick. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Strain the broth to remove the solids, then return it to the pot and add the soy sauce.
  5. Add the noodles and tofu to the broth and cook for a few more minutes, until the noodles are tender.
  6. Serve the pho in bowls, topped with bean sprouts, fresh basil, and a squeeze of lime.
