Ingredients - Serves 6

Let's Get Started

  1. In a large pot, combine the purple corn, water, cinnamon sticks, and cloves. Bring to a boil, then reduce the heat and simmer for 45 minutes.
  2. Strain the mixture, discarding the solids and reserving the liquid.
  3. Return the liquid to the pot and add the pineapple, apple, sugar, and lime juice. Bring to a simmer and cook for 15 minutes.
  4. In a small bowl, mix the cornstarch with a little water to make a slurry. Stir this into the pot and continue to cook until the mixture thickens.
  5. Add the prunes and cook for another 5 minutes.
  6. Pour the mixture into a mold or individual serving dishes and let cool.
  7. Once cool, garnish with cherries and a sprinkle of cinnamon powder before serving.
