Mazamorra Morada
Mazamorra Morada is a traditional Peruvian dessert made from purple corn and fruit. It's a sweet, thick, and creamy pudding that's usually served with a sprinkle of cinnamon on top.
Ingredients - Serves 6
- Cinnamon powder - For garnish
- Cherries - 1/4 cup, for garnish
- Prunes - 1/2 cup, diced
- Cornstarch - 1/2 cup
- Lime - Juice of 1
- Sugar - 1 cup
- Apple - 1, diced
- Pineapple - 1/2, diced
- Cloves - 5
- Cinnamon sticks - 2
- Water - 2 liters
- Purple corn - 500 grams
Let's Get Started
- In a large pot, combine the purple corn, water, cinnamon sticks, and cloves. Bring to a boil, then reduce the heat and simmer for 45 minutes.
- Strain the mixture, discarding the solids and reserving the liquid.
- Return the liquid to the pot and add the pineapple, apple, sugar, and lime juice. Bring to a simmer and cook for 15 minutes.
- In a small bowl, mix the cornstarch with a little water to make a slurry. Stir this into the pot and continue to cook until the mixture thickens.
- Add the prunes and cook for another 5 minutes.
- Pour the mixture into a mold or individual serving dishes and let cool.
- Once cool, garnish with cherries and a sprinkle of cinnamon powder before serving.
