Laping
Laping is a traditional Tibetan dish made with mung bean noodles, vegetables, and a spicy sauce.
Ingredients - Serves 4
- Salt - To taste
- Chili flakes - 1/2 teaspoon
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Cilantro - 1/4 cup, chopped
- Green onions - 4, chopped
- Red bell pepper - 1, thinly sliced
- Carrot - 1, julienned
- Cucumber - 1, thinly sliced
- Mung bean noodles - 200 grams
Let's Get Started
- Cook the mung bean noodles according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine the cooked noodles, cucumber, carrot, red bell pepper, green onions, and cilantro.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, chili flakes, and salt.
- Pour the sauce over the noodle mixture and toss to coat evenly.
- Garnish with sesame seeds and serve chilled.
