Lampredotto Sandwich
A traditional Florentine dish, the Lampredotto Sandwich is made from the fourth and final stomach of a cow, the abomasum. This delicacy is slow-cooked until tender, thinly sliced, and served on a crusty roll with salsa verde and spicy sauce.

- Salsa verde - To taste
- Crusty rolls - 4
- Parsley - A handful, chopped
- Tomatoes - 2, chopped
- Carrot - 1 large, chopped
- Celery - 2 stalks, chopped
- Onion - 1 large, chopped
- Lampredotto (abomasum) - 1 kg
Let's Get Started
- Clean the lampredotto and place it in a large pot.
- Add the onion, celery, carrot, and tomatoes to the pot.
- Cover with water and bring to a boil. Reduce the heat and simmer for about 4 hours, or until the lampredotto is tender.
- Once cooked, remove the lampredotto from the pot and let it cool. Thinly slice it.
- Split the crusty rolls in half and spread some salsa verde and spicy sauce on each half.
- Place the sliced lampredotto on the rolls and top with more salsa verde and spicy sauce if desired.
- Serve the Lampredotto Sandwich hot.
