Gigandes Plaki

Ingredients - Serves 6
- Salt and pepper - To taste
- Parsley - 1/2 cup, chopped
- Tomato paste - 2 tablespoons
- Tomatoes - 1 can (400g), chopped
- Celery - 2 stalks, finely chopped
- Carrots - 2, finely chopped
- Garlic - 3 cloves, minced
- Onions - 2 large, finely chopped
- Olive oil - 1/2 cup
- Giant beans - 500 grams, soaked overnight
Let's Get Started
- Preheat the oven to 180°C (350°F).
- Drain the beans and place them in a large pot. Cover with water and bring to a boil. Reduce the heat and simmer for about 1 hour, or until the beans are tender.
- In a large pan, heat the olive oil over medium heat. Add the onions, garlic, carrots, and celery, and cook until soft.
- Add the tomatoes, tomato paste, parsley, salt, and pepper to the pan. Stir well and simmer for about 10 minutes.
- Drain the beans and add them to the pan. Stir well to combine.
- Transfer the mixture to a large baking dish. Cover with foil and bake for 1 hour.
- Remove the foil and bake for another 30 minutes, or until the top is golden and the beans are soft.
- Serve hot, garnished with extra parsley if desired.
