  1. Preheat the oven to 180°C (350°F).
  2. Drain the beans and place them in a large pot. Cover with water and bring to a boil. Reduce the heat and simmer for about 1 hour, or until the beans are tender.
  3. In a large pan, heat the olive oil over medium heat. Add the onions, garlic, carrots, and celery, and cook until soft.
  4. Add the tomatoes, tomato paste, parsley, salt, and pepper to the pan. Stir well and simmer for about 10 minutes.
  5. Drain the beans and add them to the pan. Stir well to combine.
  6. Transfer the mixture to a large baking dish. Cover with foil and bake for 1 hour.
  7. Remove the foil and bake for another 30 minutes, or until the top is golden and the beans are soft.
  8. Serve hot, garnished with extra parsley if desired.
