Lamb Vindaloo

- Oil - 2 tablespoons
- Salt - To taste
- Tomato - 1 large, finely chopped
- Onion - 1 large, finely chopped
- Cardamom - 4 pods
- Cloves - 4
- Cinnamon - 1/2 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Cayenne pepper - 1 teaspoon
- Turmeric - 1 teaspoon
- Ginger - 1 inch piece, minced
- Garlic - 6 cloves, minced
- Vinegar - 1/2 cup
- Lamb - 1 kg, cut into pieces
Let's Get Started
- Combine the vinegar, garlic, ginger, turmeric, cayenne pepper, cumin, coriander, cinnamon, cloves, and cardamom in a bowl. Add the lamb and marinate for at least 2 hours, or overnight.
- Heat the oil in a large pot over medium heat. Add the onion and cook until soft and golden.
- Add the lamb and its marinade to the pot. Cook until the lamb is browned on all sides.
- Add the tomato and salt. Cover the pot and simmer for about 2 hours, or until the lamb is tender.
- Serve the Lamb Vindaloo with rice or naan bread.
