Kwati
Kwati is a traditional Nepali mixed bean soup made with a variety of sprouted beans and spices.
Ingredients - Serves 6
- Lemon juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Salt - To taste
- Red chili powder - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Ghee (clarified butter) - 2 tablespoons
- Water - 4 cups
- Mixed beans (mung beans, black-eyed peas, kidney beans, chickpeas, black lentils, green lentils) - 1 cup
Let's Get Started
- Soak the mixed beans overnight in water. Drain and rinse the beans.
- In a pressure cooker, add the soaked beans and 4 cups of water. Cook for 15 minutes or until the beans are tender.
- In a separate pot, heat ghee over medium heat. Add the chopped onion and sauté until golden brown.
- Add minced garlic and grated ginger to the pot and cook for another 2 minutes.
- Add cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Stir well to combine.
- Add the cooked beans along with the water from the pressure cooker to the pot. Mix well and bring to a boil.
- Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
- Garnish with chopped cilantro and drizzle with lemon juice before serving.
- Serve hot and enjoy the flavorful Kwati soup!
