Ingredients - Serves 4

Let's Get Started

  1. Pour the milk into a heavy bottomed pan and bring it to a boil.
  2. Once the milk begins to boil, lower the heat and simmer. Stir regularly to prevent the milk from sticking to the bottom of the pan.
  3. Add the sugar and continue to simmer the milk until it is reduced by half.
  4. Add the ground cardamom and chopped pistachios to the reduced milk and stir well.
  5. Pour the mixture into kulfi molds or small cups. Cover with foil and insert a wooden stick into the center.
  6. Place the molds in the freezer and freeze until set, about 4 hours or overnight.
  7. To serve, run warm water over the molds to loosen the kulfi. Garnish with a few strands of saffron and enjoy.
