Kulfi
Kulfi is a popular frozen dairy dessert from the Indian subcontinent. It is often described as 'traditional Indian ice cream.'
Ingredients - Serves 4
- Saffron strands - A few for garnish
- Pistachios - 1/4 cup, chopped
- Cardamom - 1/2 teaspoon, ground
- Sugar - 1/2 cup
- Whole milk - 4 cups
Let's Get Started
- Pour the milk into a heavy bottomed pan and bring it to a boil.
- Once the milk begins to boil, lower the heat and simmer. Stir regularly to prevent the milk from sticking to the bottom of the pan.
- Add the sugar and continue to simmer the milk until it is reduced by half.
- Add the ground cardamom and chopped pistachios to the reduced milk and stir well.
- Pour the mixture into kulfi molds or small cups. Cover with foil and insert a wooden stick into the center.
- Place the molds in the freezer and freeze until set, about 4 hours or overnight.
- To serve, run warm water over the molds to loosen the kulfi. Garnish with a few strands of saffron and enjoy.
