Kheer
Kheer is a creamy and delicious Indian rice pudding made with milk, rice, sugar, and flavored with cardamom and saffron.
Ingredients - Serves 6
- Raisins - 2 tablespoons
- Pistachios - 2 tablespoons, chopped
- Almonds - 2 tablespoons, sliced
- Saffron strands - 1/4 teaspoon
- Cardamom pods - 4, crushed
- Sugar - 1/2 cup
- Milk - 4 cups
- Basmati rice - 1/4 cup
Let's Get Started
- Wash the basmati rice under running water until the water runs clear.
- In a large saucepan, bring the milk to a boil over medium heat.
- Add the washed rice to the boiling milk and stir well.
- Reduce the heat to low and simmer, stirring occasionally, for about 30 minutes or until the rice is cooked and the mixture thickens.
- Add sugar, crushed cardamom pods, and saffron strands to the rice mixture. Stir well to combine.
- Simmer for an additional 5-10 minutes until the sugar is dissolved and the flavors are well incorporated.
- Remove from heat and let the kheer cool to room temperature.
- Garnish with sliced almonds, chopped pistachios, and raisins.
- Refrigerate for at least 2 hours before serving chilled.
