Kulfi
Kulfi is a popular frozen dairy dessert from the Indian subcontinent. It is often described as 'traditional Indian ice cream'.
Ingredients - Serves 4
- Saffron strands - A few
- Chopped nuts - 1/4 cup
- Cardamom - 1/2 teaspoon
- Sugar - 1/2 cup
- Whole milk - 4 cups
Let's Get Started
- Pour the milk into a wide, heavy-bottomed pot. Bring the milk to a boil over medium heat.
- Add the sugar and cardamom, stirring until the sugar has dissolved completely.
- Lower the heat and continue to cook the milk, stirring frequently, until it has reduced by half. This should take about 1-2 hours.
- Add the chopped nuts and saffron strands, stirring well to combine.
- Remove the pot from the heat and let the mixture cool. Once cooled, pour the mixture into kulfi molds or popsicle molds.
- Freeze the molds for at least 4 hours, or until the kulfi is firm.
- To serve, run the molds under warm water to loosen the kulfi. Unmold and serve immediately.
