Ingredients - Serves 4

Let's Get Started

  1. Pour the milk into a wide, heavy-bottomed pot. Bring the milk to a boil over medium heat.
  2. Add the sugar and cardamom, stirring until the sugar has dissolved completely.
  3. Lower the heat and continue to cook the milk, stirring frequently, until it has reduced by half. This should take about 1-2 hours.
  4. Add the chopped nuts and saffron strands, stirring well to combine.
  5. Remove the pot from the heat and let the mixture cool. Once cooled, pour the mixture into kulfi molds or popsicle molds.
  6. Freeze the molds for at least 4 hours, or until the kulfi is firm.
  7. To serve, run the molds under warm water to loosen the kulfi. Unmold and serve immediately.
