Krupnik
Krupnik is a traditional Polish barley soup made with vegetables, meat, and aromatic spices.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Potatoes - 2, diced
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Celery stalks - 2, diced
- Carrots - 2, diced
- Barley - 1 cup
- Chicken or beef - 1 lb, diced
- Chicken or beef broth - 8 cups
Let's Get Started
- In a large pot, bring the broth to a boil.
- Add the diced chicken or beef, barley, carrots, celery, onion, garlic, potatoes, bay leaf, thyme, salt, and pepper.
- Reduce the heat to low and simmer for 45 minutes, or until the barley and vegetables are tender.
- Remove the bay leaf and adjust the seasoning if needed.
- Serve hot, garnished with fresh parsley.
