Kouign-Amann is a traditional pastry from the Brittany region of France. It's a round crusty cake, made with bread dough containing layers of butter and sugar folded in.

Ingredients - Serves 12

Let's Get Started

  1. In a large bowl, combine the flour, yeast, and salt. Add the warm water and stir until a dough forms.
  2. Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes.
  3. Place the dough in a greased bowl, cover with a towel, and let rise in a warm place until doubled in size, about 1 hour.
  4. While the dough is rising, beat the butter and 1 cup of the sugar together until creamy.
  5. Roll out the dough into a large rectangle. Spread the butter mixture over half of the dough, then fold the other half over top.
  6. Roll out the dough again and fold in thirds. Repeat this process two more times, then wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat the oven to 375°F (190°C).
  8. Roll out the dough one last time and sprinkle with the remaining sugar. Cut the dough into 12 squares and place each square in a muffin cup.
  9. Bake for 25-30 minutes, or until the pastries are golden brown and caramelized. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
