Kouign Amann
Kouign-Amann is a traditional pastry from the Brittany region of France. It's a round crusty cake, made with bread dough containing layers of butter and sugar folded in.
Ingredients - Serves 12
- Granulated sugar - 2 cups
- Unsalted butter - 2 cups
- Warm water - 1 1/4 cups
- Salt - 1 teaspoon
- Active dry yeast - 1 tablespoon
- Bread flour - 3 cups
Let's Get Started
- In a large bowl, combine the flour, yeast, and salt. Add the warm water and stir until a dough forms.
- Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes.
- Place the dough in a greased bowl, cover with a towel, and let rise in a warm place until doubled in size, about 1 hour.
- While the dough is rising, beat the butter and 1 cup of the sugar together until creamy.
- Roll out the dough into a large rectangle. Spread the butter mixture over half of the dough, then fold the other half over top.
- Roll out the dough again and fold in thirds. Repeat this process two more times, then wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the dough one last time and sprinkle with the remaining sugar. Cut the dough into 12 squares and place each square in a muffin cup.
- Bake for 25-30 minutes, or until the pastries are golden brown and caramelized. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
