Sfenj
Sfenj are traditional Moroccan doughnuts that are crispy on the outside, soft and airy on the inside. They are typically served for breakfast or tea time.
Ingredients - Serves 12
- Granulated sugar - For coating
- Vegetable oil - For frying
- Salt - 1/2 teaspoon
- All-purpose flour - 2 cups
- Active dry yeast - 1 tablespoon
- Sugar - 1 teaspoon
- Warm water - 1 cup
Let's Get Started
- In a small bowl, combine the warm water and sugar. Stir until the sugar is dissolved. Sprinkle the yeast over the water and let it sit for 10 minutes, or until it becomes frothy.
- In a large bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture. Mix with your hands until a sticky dough forms.
- Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 2 hours, or until it doubles in size.
- Heat the oil in a deep fryer or large saucepan to 375°F (190°C).
- With wet hands, take a piece of dough and make a hole in the center with your thumb. Stretch the dough to form a ring and carefully drop it into the hot oil.
- Fry the doughnuts until they are golden brown, turning them once. This should take about 5 minutes per side.
- Drain the doughnuts on paper towels and then roll them in granulated sugar while they are still warm.
- Serve the sfenj warm or at room temperature.
