Crêpes Suzette
Crêpes Suzette is a French dessert consisting of crêpes with a sauce of caramelized sugar and butter, tangerine or orange juice, zest, and Grand Marnier or orange Curaçao liqueur on top, served flambé.
Ingredients - Serves 4
- Unsalted butter - 4 tablespoons
- Grand marnier - 1/4 cup
- Orange zest - 1 tablespoon
- Orange juice - 1/2 cup
- Granulated sugar - 1/4 cup
- Unsalted butter - 2 tablespoons, melted
- Salt - 1/4 teaspoon
- All-purpose flour - 1 cup
- Eggs - 2
- Milk - 1 cup
Let's Get Started
- In a blender, combine the milk, eggs, flour, salt, and 2 tablespoons of melted butter. Blend until smooth.
- Heat a non-stick skillet over medium heat. Pour 1/4 cup of the batter into the skillet and swirl to evenly coat the bottom. Cook until the crêpe is golden on the bottom, about 2 minutes. Flip and cook the other side for 1 minute. Repeat with the remaining batter.
- In a separate skillet, combine the sugar, orange juice, and orange zest. Cook over medium heat until the sugar has dissolved.
- Stir in the Grand Marnier and bring to a simmer. Cook for 2 minutes.
- Add the 4 tablespoons of butter to the skillet, one at a time, stirring until melted.
- Fold the crêpes into quarters and add them to the skillet. Spoon the sauce over the crêpes and cook for 1 minute.
- Serve the crêpes warm with the sauce.
