Kothu Parotta
Kothu Parotta is a popular South Indian street food made with shredded flatbread, vegetables, and spices.
Ingredients - Serves 4
- Oil - 2 tablespoons
- Salt - To taste
- Garam masala - 1 teaspoon
- Red chilli powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Chicken - 200 grams, cooked and shredded
- Eggs - 2
- Curry leaves - A sprig
- Ginger garlic paste - 1 tablespoon
- Green chillies - 2, slit
- Tomatoes - 2, finely chopped
- Onions - 2, finely chopped
- Parotta - 4, shredded
Let's Get Started
- Heat oil in a pan and add the onions, green chillies, and curry leaves. Saute until the onions turn translucent.
- Add the ginger garlic paste and saute until the raw smell goes away.
- Add the tomatoes and cook until they are soft.
- Add the turmeric powder, red chilli powder, garam masala, and salt. Mix well.
- Break the eggs into the pan and scramble them with the masala.
- Add the cooked and shredded chicken to the pan and mix well.
- Add the shredded parotta and mix everything together. Cook for a few minutes until everything is well combined.
- Serve hot with raita or any side dish of your choice.
