Ingredients - Serves 4

Let's Get Started

  1. Poach the fish fillets in the milk until they're cooked through. Remove the fish, reserving the milk, and flake the fish with a fork.
  2. Melt the butter in a pan over medium heat. Add the onion and garlic and cook until they're soft.
  3. Stir in the flour and cook for a couple of minutes. Gradually add the reserved milk, stirring constantly, until you have a thick sauce.
  4. Add the flaked fish, parsley, salt, and pepper to the sauce. Stir well, then remove from the heat and let cool.
  5. Once the mixture is cool, shape it into small cylinders. Dip each one in the beaten egg, then roll in the breadcrumbs.
  6. Heat the oil in a deep fryer or large, deep saucepan to 180°C (350°F). Fry the croquettes in batches until they're golden brown and crispy.
  7. Drain the croquettes on paper towels, then serve hot.
