Croquetas de Pescado
These Spanish-style fish croquettes are a delicious and popular tapas dish. They're crispy on the outside and creamy on the inside, with a delicate fish flavor.
Ingredients - Serves 4
- Oil - For frying
- Breadcrumbs - 1 cup
- Eggs - 2, beaten
- Salt and pepper - To taste
- Parsley - 1 tablespoon, chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Flour - 1/2 cup
- Butter - 2 tablespoons
- Milk - 1 cup
- White fish fillets - 500 grams
Let's Get Started
- Poach the fish fillets in the milk until they're cooked through. Remove the fish, reserving the milk, and flake the fish with a fork.
- Melt the butter in a pan over medium heat. Add the onion and garlic and cook until they're soft.
- Stir in the flour and cook for a couple of minutes. Gradually add the reserved milk, stirring constantly, until you have a thick sauce.
- Add the flaked fish, parsley, salt, and pepper to the sauce. Stir well, then remove from the heat and let cool.
- Once the mixture is cool, shape it into small cylinders. Dip each one in the beaten egg, then roll in the breadcrumbs.
- Heat the oil in a deep fryer or large, deep saucepan to 180°C (350°F). Fry the croquettes in batches until they're golden brown and crispy.
- Drain the croquettes on paper towels, then serve hot.
