Shakshuka
Shakshuka is a classic North African and Middle Eastern dish of poached eggs in a spicy tomato sauce. It's a simple and delicious meal that's perfect for breakfast or dinner.
Ingredients - Serves 4
- Parsley - For garnish
- Eggs - 4
- Salt - To taste
- Cayenne pepper - 1/2 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Tomato paste - 2 tablespoons
- Tomatoes - 4, chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, chopped
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and bell pepper and cook until soft, about 5 minutes.
- Add the garlic and cook for another minute.
- Add the tomatoes, tomato paste, paprika, cumin, cayenne pepper, and salt. Stir well and simmer for 10 minutes.
- Make four wells in the tomato mixture and crack an egg into each well.
- Cover the skillet and cook until the eggs are done to your liking, about 5-10 minutes.
- Garnish with parsley and serve.
