Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and bell pepper and cook until soft, about 5 minutes.
  3. Add the garlic and cook for another minute.
  4. Add the tomatoes, tomato paste, paprika, cumin, cayenne pepper, and salt. Stir well and simmer for 10 minutes.
  5. Make four wells in the tomato mixture and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are done to your liking, about 5-10 minutes.
  7. Garnish with parsley and serve.
