Kopytka
Kopytka are traditional Polish potato dumplings that are similar to gnocchi. They are made with mashed potatoes, flour, and served with various toppings or sauces.
Ingredients - Serves 4
- Chopped fresh parsley - 2 tablespoons
- Sour cream - 1/2 cup
- Bread crumbs - 1/2 cup
- Butter - 2 tablespoons
- Salt - 1 teaspoon
- Egg - 1
- All-purpose flour - 2 cups
- Potatoes - 4 large, peeled and boiled
Let's Get Started
- Boil the peeled potatoes until tender. Drain and let them cool slightly.
- Mash the potatoes until smooth.
- In a large mixing bowl, combine the mashed potatoes, flour, egg, and salt. Mix until well combined.
- Knead the dough on a floured surface until it becomes smooth and elastic.
- Divide the dough into small portions and roll each portion into a long rope.
- Cut the ropes into small pieces, about 1-inch in length.
- Bring a large pot of salted water to a boil. Add the dumplings and cook until they float to the surface, about 3-5 minutes.
- In a separate pan, melt the butter over medium heat. Add the bread crumbs and cook until golden brown.
- Serve the cooked kopytka with the buttered bread crumbs, sour cream, and chopped fresh parsley.
