Kinoko Gohan
Kinoko Gohan is a traditional Japanese dish that combines rice with a variety of mushrooms for a flavorful and hearty meal.
Ingredients - Serves 4
- Green onions - 2, chopped
- Salt - 1/2 teaspoon
- Dashi stock - 2 cups
- Sake - 1 tablespoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Mixed mushrooms (shiitake, maitake, etc.) - 200 grams
- Japanese short-grain rice - 2 cups
Let's Get Started
- Rinse the rice under cold water until the water runs clear. Let it soak for 30 minutes, then drain.
- In a large pot, combine the rice, dashi stock, soy sauce, mirin, sake, and salt. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- While the rice is cooking, prepare the mushrooms by cleaning and slicing them.
- After the rice has been cooking for 15 minutes, add the mushrooms on top of the rice (do not stir), cover the pot again, and let it cook for another 10 minutes.
- After 10 minutes, turn off the heat and let the rice and mushrooms steam for another 10 minutes.
- Finally, stir the mushrooms and rice together gently, top with chopped green onions, and serve.
