Khao Man Gai
Khao Man Gai is a popular Thai street food dish that's made with poached chicken and served over rice. It's simple, comforting, and delicious.
Ingredients - Serves 4
- Cucumber - 1, sliced
- Sugar - 1 tablespoon
- Oyster sauce - 1/4 cup
- Soy sauce - 1/4 cup
- Cilantro - 1 bunch, chopped
- Jasmine rice - 2 cups
- Ginger - 1 piece, about 2 inches
- Garlic - 5 cloves, minced
- Whole chicken - 1
Let's Get Started
- Place the chicken in a large pot and fill with enough water to cover. Add half of the garlic and ginger to the pot.
- Bring the water to a boil, then reduce the heat and simmer for about 45 minutes, or until the chicken is cooked through.
- While the chicken is cooking, rinse the rice under cold water until the water runs clear.
- In a separate pot, heat some oil over medium heat. Add the remaining garlic and ginger and cook until fragrant.
- Add the rice to the pot and stir to coat in the oil, garlic, and ginger. Cook for a few minutes, then add enough water to cover the rice by about 1 inch.
- Bring the rice to a boil, then reduce the heat and cover. Let the rice cook for about 20 minutes, or until all the water is absorbed.
- Once the chicken is cooked, remove it from the pot and let it cool. Once cool, shred the chicken into pieces.
- In a small bowl, mix together the soy sauce, oyster sauce, and sugar. This will be the sauce for the chicken.
- To serve, plate the rice and top with the shredded chicken. Drizzle the sauce over the top and garnish with cilantro and cucumber slices.
