Ingredients - Serves 4

Let's Get Started

  1. Place the chicken in a large pot and fill with enough water to cover. Add half of the garlic and ginger to the pot.
  2. Bring the water to a boil, then reduce the heat and simmer for about 45 minutes, or until the chicken is cooked through.
  3. While the chicken is cooking, rinse the rice under cold water until the water runs clear.
  4. In a separate pot, heat some oil over medium heat. Add the remaining garlic and ginger and cook until fragrant.
  5. Add the rice to the pot and stir to coat in the oil, garlic, and ginger. Cook for a few minutes, then add enough water to cover the rice by about 1 inch.
  6. Bring the rice to a boil, then reduce the heat and cover. Let the rice cook for about 20 minutes, or until all the water is absorbed.
  7. Once the chicken is cooked, remove it from the pot and let it cool. Once cool, shred the chicken into pieces.
  8. In a small bowl, mix together the soy sauce, oyster sauce, and sugar. This will be the sauce for the chicken.
  9. To serve, plate the rice and top with the shredded chicken. Drizzle the sauce over the top and garnish with cilantro and cucumber slices.
