Khao Kluk Kapi
Khao Kluk Kapi is a traditional Thai dish made with fried rice mixed with shrimp paste, served with sweet pork, sour mango, fried shrimp, chillies, and omelette.
Ingredients - Serves 4
- Coriander leaves - A handful
- Cucumber - 1, sliced
- Red chillies - 2, sliced
- Eggs - 4
- Shrimp - 8, peeled and deveined
- Green mango - 1, julienned
- Fish sauce - 2 tablespoons
- Palm sugar - 2 tablespoons
- Pork belly - 200 grams, thinly sliced
- Vegetable oil - 2 tablespoons
- Shrimp paste - 2 tablespoons
- Cooked jasmine rice - 4 cups
Let's Get Started
- Heat 1 tablespoon of oil in a pan over medium heat. Add the shrimp paste and stir until fragrant.
- Add the cooked rice to the pan and stir until the rice is evenly coated with the shrimp paste. Set aside.
- In the same pan, add the pork belly and cook until browned. Add the palm sugar and fish sauce and stir until the pork is coated. Set aside.
- In another pan, heat the remaining oil over medium heat. Add the shrimp and cook until pink. Set aside.
- In the same pan, crack the eggs and cook until the whites are set but the yolks are still runny.
- To serve, place a portion of the shrimp paste rice on a plate. Arrange the sweet pork, fried shrimp, sour mango, chillies, cucumber, and omelette around the rice. Garnish with coriander leaves.
