Ingredients - Serves 4

Let's Get Started

  1. Heat 1 tablespoon of oil in a pan over medium heat. Add the shrimp paste and stir until fragrant.
  2. Add the cooked rice to the pan and stir until the rice is evenly coated with the shrimp paste. Set aside.
  3. In the same pan, add the pork belly and cook until browned. Add the palm sugar and fish sauce and stir until the pork is coated. Set aside.
  4. In another pan, heat the remaining oil over medium heat. Add the shrimp and cook until pink. Set aside.
  5. In the same pan, crack the eggs and cook until the whites are set but the yolks are still runny.
  6. To serve, place a portion of the shrimp paste rice on a plate. Arrange the sweet pork, fried shrimp, sour mango, chillies, cucumber, and omelette around the rice. Garnish with coriander leaves.
