Kai Look Keuy
A popular Thai dish, Kai Look Keuy or Son-in-Law eggs are deep-fried hard-boiled eggs topped with a sweet and tangy tamarind sauce.
Ingredients - Serves 4
- Coriander leaves - For garnish
- Red chili - 1, finely chopped
- Fish sauce - 1 tablespoon
- Palm sugar - 2 tablespoons
- Tamarind paste - 2 tablespoons
- Vegetable oil - For deep frying
- Eggs - 4, hard-boiled and peeled
Let's Get Started
- Heat the oil in a deep pan or wok over medium heat.
- Carefully add the eggs and deep-fry until golden brown. Remove and drain on paper towels.
- In a saucepan, combine the tamarind paste, palm sugar, and fish sauce. Stir over low heat until the sugar is dissolved.
- Add the chopped chili and simmer for a few minutes until the sauce is thickened.
- Pour the sauce over the fried eggs and garnish with coriander leaves before serving.
