Keto Sausage Stuffed Peppers
These keto-friendly sausage stuffed peppers are packed with flavor and make a delicious low-carb meal.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Shredded mozzarella cheese - 1/2 cup
- Salt and pepper - To taste
- Italian seasoning - 1 teaspoon
- Tomato sauce - 1/2 cup
- Cauliflower rice - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Ground sausage - 1 pound
- Bell peppers - 4 large
Let's Get Started
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, cook the ground sausage over medium heat until browned. Remove from the skillet and set aside.
- In the same skillet, sauté the diced onion and minced garlic until softened.
- Add the cauliflower rice to the skillet and cook for 2-3 minutes, until slightly tender.
- Stir in the cooked sausage, tomato sauce, Italian seasoning, salt, and pepper. Cook for another 2-3 minutes.
- Fill each bell pepper with the sausage mixture and place them in a baking dish.
- Bake for 20 minutes, or until the peppers are tender.
- Remove from the oven and sprinkle the shredded mozzarella cheese on top of each pepper.
- Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
