Keto Chicken Alfredo
This creamy and delicious Keto Chicken Alfredo is a low-carb version of the classic Italian dish.
Ingredients - Serves 4
- Zucchini noodles - 4 cups
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Parmesan cheese - 1/2 cup, grated
- Heavy cream - 1 cup
- Garlic - 3 cloves, minced
- Butter - 2 tablespoons
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- Season the chicken breasts with salt and pepper.
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and cook until fragrant, about 1 minute.
- Add the chicken breasts to the skillet and cook until browned and cooked through, about 6-8 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the heavy cream and bring to a simmer.
- Stir in the grated Parmesan cheese and continue to cook until the sauce thickens, about 2-3 minutes.
- Slice the cooked chicken breasts into thin strips.
- Add the zucchini noodles to the skillet and toss to coat them in the Alfredo sauce.
- Cook for 2-3 minutes, until the zucchini noodles are tender.
- Serve the zucchini noodles topped with the sliced chicken and garnish with fresh parsley.
