Kapenta Stew
This is a traditional Zimbabwean dish made with kapenta fish, tomatoes, onions, and spices.
Ingredients - Serves 4
- Cooking oil - 2 tablespoons
- Water - 1 cup
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Curry powder - 1 tablespoon
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Tomatoes - 4 medium, chopped
- Kapenta fish - 500g
Let's Get Started
- Heat the oil in a large pot over medium heat.
- Add the onions and cook until soft and translucent, about 5 minutes.
- Add the garlic, ginger, curry powder, cumin, paprika, salt, and pepper. Cook for 1-2 minutes, stirring constantly.
- Add the tomatoes and cook until they start to break down, about 5 minutes.
- Add the kapenta fish and water. Stir gently to combine.
- Cover the pot and simmer for 15-20 minutes, or until the fish is cooked through.
- Serve hot with sadza or rice.
