Kale and Quinoa Salad

Ingredients - Serves 4

Let's Get Started

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover and cook for 15 minutes. Let it cool.
  3. In a large bowl, combine the kale, bell pepper, carrot, and cucumber.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Add the cooled quinoa to the salad and toss to combine.
  7. Serve immediately, or refrigerate for up to 2 days.
