Kale and Quinoa Salad
A healthy and delicious salad packed with kale, quinoa, and fresh veggies. Perfect for a light lunch or side dish.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Cucumber - 1, diced
- Carrot - 1, shredded
- Red bell pepper - 1, diced
- Kale - 1 bunch, stemmed and chopped
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear.
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover and cook for 15 minutes. Let it cool.
- In a large bowl, combine the kale, bell pepper, carrot, and cucumber.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Add the cooled quinoa to the salad and toss to combine.
- Serve immediately, or refrigerate for up to 2 days.
