Kalam Polo Shirazi
Kalam Polo Shirazi is a delicious Persian rice dish made with cabbage, rice, and aromatic spices.
Ingredients - Serves 4
- Fresh dill - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Water - 4 cups
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Ground beef - 1 pound
- Cabbage - 1 small head, shredded
- Basmati rice - 2 cups
Let's Get Started
- Wash the rice thoroughly and soak it in water for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until golden brown.
- Add the ground beef and cook until browned.
- Add the shredded cabbage, turmeric, cumin, salt, and pepper. Stir well to combine.
- Drain the soaked rice and add it to the pot. Stir gently to mix with the other ingredients.
- Pour in the water and lime juice. Bring to a boil, then reduce the heat to low.
- Cover the pot and let it simmer for about 30 minutes, or until the rice is cooked and fluffy.
- Remove from heat and let it rest for 5 minutes.
- Fluff the rice with a fork and sprinkle fresh dill on top.
- Serve hot and enjoy!
