Dolmadakia
Dolmadakia, also known as stuffed grape leaves, is a popular Greek appetizer made with grape leaves, rice, and herbs.
Ingredients - Serves 6
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Fresh mint - 1/4 cup, chopped
- Fresh dill - 1/4 cup, chopped
- Water - 2 cups
- Short-grain rice - 1 cup
- Garlic - 2 cloves, minced
- Onions - 2, finely chopped
- Olive oil - 1/4 cup
- Grape leaves - 1 jar (16 oz)
Let's Get Started
- Rinse the grape leaves and soak in warm water for 20 minutes.
- Heat the olive oil in a large pan over medium heat. Add the onions and garlic and cook until soft.
- Add the rice to the pan and cook for 2-3 minutes, stirring constantly.
- Add the water, dill, mint, lemon juice, salt, and pepper. Cover and simmer for 20 minutes, or until the rice is cooked.
- Drain the grape leaves and pat dry. Place a spoonful of the rice mixture in the center of each leaf and fold the sides over, then roll up into a cylinder.
- Place the stuffed leaves seam-side down in a large pot. Cover with water and simmer for 40 minutes, or until the leaves are tender.
- Serve the dolmadakia warm or cold, with lemon wedges on the side.
