Kadhi Pakora
Kadhi Pakora is a popular North Indian dish made with gram flour, sour yogurt and spices. It is best enjoyed with rice or chapati.
Ingredients - Serves 4
- Oil - for frying
- Ginger - 1 inch piece, grated
- Garlic - 4 cloves, minced
- Green chilies - 2, slit
- Onion - 1, finely chopped
- Asafoetida (hing) - a pinch
- Curry leaves - 8-10
- Fenugreek seeds - 1/2 teaspoon
- Mustard seeds - 1 teaspoon
- Water - 4 cups
- Salt - to taste
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Sour yogurt - 2 cups
- Gram flour (besan) - 1 cup
Let's Get Started
- In a bowl, mix gram flour, yogurt, turmeric powder, red chili powder, salt and water. Whisk until smooth.
- Heat oil in a pan, add mustard seeds, fenugreek seeds, curry leaves and asafoetida. Saute for a few seconds.
- Add chopped onion, green chilies, minced garlic and grated ginger. Saute until onions turn golden brown.
- Pour the gram flour and yogurt mixture into the pan. Stir continuously until it comes to a boil.
- Reduce the heat and let it simmer for about 30 minutes, stirring occasionally.
- In the meantime, prepare pakoras by mixing gram flour, chopped onions, green chilies, red chili powder, turmeric powder, salt and a little water. Mix well to make a thick batter.
- Heat oil in a pan for deep frying. Drop spoonfuls of batter into the hot oil and fry until golden brown. Drain on paper towels.
- Add the fried pakoras to the simmering kadhi. Cook for another 10 minutes.
- Serve hot with rice or chapati.
