Kacche Gosht Ki Biryani
Kacche Gosht Ki Biryani is a traditional Indian dish made with raw mutton, basmati rice, and a blend of spices. The mutton and rice are layered and then cooked together in this delicious and aromatic dish.
Ingredients - Serves 6
- Salt - To taste
- Ghee - 1/2 cup
- Fresh coriander leaves - 1/2 cup
- Fresh mint leaves - 1/2 cup
- Saffron - A pinch, soaked in 2 tablespoons warm milk
- Lemon juice - 2 tablespoons
- Garam masala powder - 1 tablespoon
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 tablespoon
- Yogurt - 1 cup
- Ginger-garlic paste - 2 tablespoons
- Onions - 3, finely sliced
- Mutton - 1 kg
- Basmati rice - 2 cups
Let's Get Started
- Wash the mutton and marinate it with ginger-garlic paste, yogurt, red chili powder, turmeric powder, garam masala powder, lemon juice, and salt. Let it rest for at least 2 hours.
- Wash the rice and soak it in water for 30 minutes. Then, cook the rice until it's 70% cooked. Drain the water and set the rice aside.
- Heat ghee in a pan and fry the onions until they are golden brown. Remove half of the onions and set them aside for garnishing.
- In the same pan, add the marinated mutton and cook it on high heat for 7-8 minutes.
- Layer the partially cooked rice over the mutton. Sprinkle the fried onions, mint leaves, coriander leaves, and saffron milk over the rice.
- Cover the pan with a tight lid and cook on low heat for 30-40 minutes.
- Let the Biryani rest for 5 minutes before mixing the layers. Serve hot.
